The bewitching season of Halloween is upon us, and what better way to celebrate the spook in you than to throw a fun-filled bash? Want something fun to serve? These sweet, fanciful, and funky treats are just what you need to please your ghoulish guests.
RED VELVET SPIDER WEB COOKIES
INGREDIENTS
Cookies
- 1 box red velvet cake mix (Duncan Hines brand recommended)
- 2 eggs
- 1/3 c vegetable oil
Frosting
- 1 stick unsalted butter, softened
- 8 oz cream cheese, softened
- 1 1/2 tsp vanilla extract
- 6 oz powdered sugar
- 3 tubes black
decorating gel
INSTRUCTIONS
Preheat oven to 350 degrees. Combine cake mix, eggs,
and oil in a large bowl, stirring with a spoon until no
lumps remain. The mixture will be thick, the consistency of cookie dough.
Roll dough into balls, using one tablespoon of the mixture per ball. Place cookies on a lightly-greased baking sheet, spacing them 2 inches apart. Lightly flatten balls with the back of a spoon. Bake for about 10 minutes or until a toothpick inserted into the center of a cookie comes out clean. Let cookies cool completely.
To make the frosting, beat the butter and cream cheese with a handheld or upright mixer until creamy and completely blended. Add vanilla, followed by powdered sugar (in small batches, about 2 to 3 ounces at a time). Beat until smooth. Spread frosting over cookies, and use black decorating gel to create a spider web pattern.
MAKES 2 DOZEN COOKIES.
