Summer's over, and it's time to break out that bento box you shelved during the months spent frolicking at the beach. Use it to carry these easy, drool-worthy eats to school. Colorful, fun, tasty, and nutritiousthese recipes will make you a lunchroom legacy.
Pineapple Yakitori
INGREDIENTS
- 1/2 pineapple, cored, halved lengthwise and sliced into wedges lengthwise
Cinnamon Simple Syrup
- 1/2 tsp cinnamon, preferably Ceylon or Mexican
- wood skewers
- 1/2 c sugar
- 1/2 c water
INSTRUCTIONS
Start by making the cinnamon simple syrup: Place sugar and water in a medium saucepan and stir to combine. Bring to a boil and simmer until sugar is dissolved. Remove from heat and cool to room temperature. Add cinnamon and stir to combine.
Marinate pineapple in syrup mixture for 30 minutes. Meanwhile, soak skewers in water for 20 minutes to prevent them from burning.
Heat grill or grill pan to medium-high. Cook fruit, basting with syrup as you turn it, until grill marks appear, about 2 minutes per side.
